Live sea urchin (uni)

Always love the live uni from Fisherman wharf! $10 for 3



How to clean live sea urchin?

Please wear thick rubber gloves.
1. Take a large knife and crack an X on the Urchin shell on the underside. Hit more gently than you think you should.
2.  Carefully separate the pieces of shell. (Or if you have a pair of thick scissors, cut a hole around the X and scoop the Uni out with a spoon.)
3.  Extract the pieces of yellow or orange Uni and place on a plate.
4.  Pick all guts and bits of partially digested seaweed off the Uni.
5.  Mix a pot of very cold salt water***. A tablespoon-ish of salt in 4L water should do. Ocean water is better.
6.  Take each piece of Uni and individually wash each one very gently in the salt water.
7.  Dry them by placing the Uni on paper towel
8. Serve

*** must wash with Sea Salt water. Place it on paper towel and you can keep it fresh in fridge for one or two days fresh! If you rinse it under normal tap water, the Uni will melt and become watery.
