火炙壽司

Bought a gas gun in Hong Kong. Let's try that out with sushi first. Next time will be Creme Brulee!

You can make Seared Ahi or Albocore Tuna by using the same method!
That is the gun that we bought in HK.

3D Lego and Baby Block Cake and cookie

April 21,2012. We are having a baby shower for my friends John and Charlene. Beside Chilli Beef Sausage Pasta that I will make for the potluck party. I will also make a cake and baby shower cookie for my dear friends too. I did some research on the idea for baby shower cake. And I want to make it fun! ("⌒∇⌒")

Cake base is chocolate cake with vanilla frosting. For the blocks, I decided to use rice krispies. It makes a better cupid shape then using cake itself! So friends can choose to eat cake and/or rice krispies at the same time! ♡^▽^♡

I made the rice krispies and the marshmallow fondant a night before. Then I use about 6 more hours on baking cakes and cookies. And apply fondant and icing.  ⊙︿⊙

Applying fondant to Rice Krispies square step by step
1. Rice krispies cut in cupid shape
2. Apply Vanilla frosting to the surface
3. Put fondant
4. More fondant for numbers and borders
Applying fondant to cake and to assemble cake
1. Prepare Chocolate Cake base
2. Apply Vanilla frosting on surface
3. Use circle cookie cutter to cut the Rice Krispies to knob shape
4. Apply Vailla frosting to Rice Krispies
5. Put fondant on both Rice Krispies and Cake
6. Assemble all together
Varieties of baby shower cookies! Use Fondant and royal icing for decorations.

Recipe for Royal Icing:
2 Cups Icing Sugar
2 Tsp Lemon Juice
2 Large Egg White
Whisk them all together
Remember to cover icing by plastic wrap all the time to prevent harden.

雞蛋布丁(甸) Egg pudding

返香港時,常去"五代同糖"食甜品。今次除了我喜愛的雪花冰外,還食了他們的雞蛋布丁。好正,所以我決定返來即整!結果賣相不錯,但因為心急原故,Gelatine dissolved得唔好,個布丁水汪汪,真對唔住來試食的朋友們 :(

椰汁紅豆黑糯米糖水

上星期party時,知道朋友們喜愛中式糖水,而且返香港三星期當中,去了潮洲又去了星加彼,衝呀趕呀!真的要補一補,就整椰汁紅豆黑糯米糖水啦!我十分喜愛黑糯米糖水! hehe

雪耳生磨杏仁露 Almond Tea

今次返香港大量入了中式懷舊食譜。回來後决定來一次中式糖水(美食): 雪耳生磨杏仁露!  返來溫哥華後啲Heat 太勁太dry了!要潤一潤!

Recipe: serves 3-4
Ingredient
100g Long Huang Almond (Jumbo Apricot Kernels) 南杏
10g Bitter Chinese Almond (Bitter Apricot Kernels)北杏
2Tbsp rice
120g Rock sugar (I feel this amount is too sweet, I put less)
625ml water
250 ml evaporated milk or milk
2 snow fungus
Directions:
  1. Rinse Long Huang almond, bitter Chinese almond and plain rice. Soak in water for 1 hour. Drain. Pour into blender. Add 2 measuring cups water. Blend with high speed to fine mush. Sift with strainer or cloth bag. Squeeze liquid.
  2. Soak snow fungus in water until expanded. Rinse. Remove stems and tear fungus into small florets.
  3. Bring reamining 2 measuring cups of water to boil in pot. Add snow fungus. Cook for 5 minutes. Add milk, almond liquid and rock sugar. Cook over medium low heat until rock sugar dissolves. Taste soup. Serve.

Green Tea Tofu Cheesecake

April 1st, 2012 is my Father-in-law's 65th birthday. This year we came back to HK to celebrate Kenneth's wedding as well as Father's birthday. Since the oven is not working very well at home here in HK, I decided to make something easy. And due to lack of cake making and cake decoration utensils, I think it is better to make refrigerated cheesecake. Green tea Tofu Cheesecake.
